If you were to ask my 9-year-old what his favorite soup is, it would be this Zuppa Toscana soup recipe. But, he just calls it the spicy sausage and potato soup. I probably will never correct him because I love it.

If you’ve been to Olive Garden, you know that they have this Zuppa Toscana soup that’s really yummy. Well, of course I had to try and recreate it because that’s just how my mind works. However, I like a really hearty soup. I soup that can hold its own and fill you up. So that’s what I set out to make. This version of Zuppa Toscana soup is loaded with extra sausage and potatoes and packed with flavor. It’s a meal in itself and I love it so much.

What Ingredients Are in Zuppa Toscana Soup?

  • Italian Sausage – I have used a variety of Italian sausage and my very favorite brand for this recipe is Jimmy Dean Italian Sausage. The flavors blend well together. I also use two pounds of this sausage. We LOVE a hearty soup, so extra meat is always a bonus.
  • Bacon – This is optional but if you want to add some crispy bacon to this recipe, I highly recommend it!
  • Russet Potatoes – Russet potatoes are my go-to for this soup. They’re cheap, they’re flavorful and they have the perfect texture in this soup.
  • Onion Powder – I like to add in a tiny bit of onion powder. This soup is going to have a lot of flavors so just a little is great.
  • Minced Garlic â€“ I love the flavor of toasted garlic in this Zuppa Toscana soup. This is an Italian soup, so it really brings in the classic Italian flavors.
  • Chicken Broth – This is going to be the base of your soup.
  • Kosher Salt -Kosher salt is one of my very favorite seasonings. Unlike regular table salt, kosher salt is not iodized and it’s very versatile. The texture is large, light flakes that don’t dissolve immediately. It’s going to give a richer flavor than regular table salt.
  • Heavy Whipping Cream – I don’t think you can ever go wrong with adding in heavy whipping cream. This makes the soup so creamy and enhances the flavors.
  • Baby Spinach – If the picky eaters at your house frown upon spinach, feel free to leave it out. I love the added texture and crunch the baby spinach gives to this soup.

How to Make Zuppa Toscana Soup

  1. In a large stock pot, cook sausage until completely cooked through.
  2. While sausage is cooking, peel and slice potatoes into thin slices. Set aside.
  3. When sausage is done, remove from stock pot and drain.
  4. Add garlic to the same stock pot and let cook for 1-2 minutes until garlic begins to brown slightly.
  5. Add in potatoes, chicken broth, onion powder, kosher salt and pepper.
  6. Cover and bring to a boil.
  7. Once the soup begins to boil, reduce heat immediately to medium low and cook until potatoes are soft.
  8. When potatoes are soft, add in sausage and heavy whipping cream. Stir until well combined.
  9. Turn heat off and add in baby spinach. Mix until spinach has wilted and is well incorporated with the soup.
  10. Serve and enjoy!

Gluten Free Zuppa Toscana Soup

This Zuppa Toscana soup recipe is gluten free! However, I always caution those making recipes to make sure and check all of your ingredients just to make sure there isn’t a product you’re using that is not gluten free.

Storage and Reheating

Storage:
Allow the soup to cool completely, then store it in an airtight container in the refrigerator for up to 3–4 days.

Reheating:
Reheat individual portions in the microwave in 30–45 second intervals, stirring between each, until heated through. For larger portions, reheat on the stovetop over medium-low heat, stirring frequently and adding a splash of milk or broth if needed to loosen the soup
