Zuppa Toscana Soup

Ingredients
  

  • 2 lbs Italian sausage Jimmy Dean
  • 7 medium russet potatoes
  • 1/2 tsp minced garlic
  • 1/2 tsp onion powder
  • 1/2 tbsp kosher salt
  • 1/4 tsp pepper
  • 4 cups chicken broth
  • 1 1/2 cups heavy whipping cream
  • 1 1/2 cups baby spinach
  • 1/2 lb. cooked bacon (optional)

Instructions
 

  • In a large stock pot, cook sausage until completely cooked through.
  • While sausage is cooking, peel and slice potatoes into thin slices. Set aside.
  • When sausage is done, remove from stock pot and drain.
  • Add garlic to the same stock pot and let cook for 1-2 minutes until garlic begins to brown slightly.
  • Add in potatoes, chicken broth, onion powder, kosher salt and pepper.
  • Cover and bring to a boil.
  • Once the soup begins to boil, reduce heat immediately to medium low and cook until potatoes are soft.
  • When potatoes are soft, add in sausage and heavy whipping cream. Stir until well combined.
  • Turn heat off and add in baby spinach. Mix until spinach has wilted and is well incorporated with the soup.
  • Serve and enjoy!
