Zuppa Toscana Soup
With soft slices of potato, flavorful pieces of Italian sausage in a hearty warm soup, this Zuppa Toscana soup is one of our absolute favorite soups during the cold winter months.

2 lbs Italian sausage Jimmy Dean 7 medium russet potatoes 1/2 tsp minced garlic 1/2 tsp onion powder 1/2 tbsp kosher salt 1/4 tsp pepper 4 cups chicken broth 1 1/2 cups heavy whipping cream 1 1/2 cups baby spinach
In a large stock pot, cook sausage until completely cooked through.
While sausage is cooking, peel and slice potatoes into thin slices. Set aside.
When sausage is done, remove from stock pot and drain.
Add garlic to the same stock pot and let cook for 1-2 minutes until garlic begins to brown slightly.
Add in potatoes, chicken broth, onion powder, kosher salt and pepper.
Cover and bring to a boil.
Once the soup begins to boil, reduce heat immediately to medium low and cook until potatoes are soft.
When potatoes are soft, add in sausage and heavy whipping cream . Stir until well combined.
Turn heat off and add in baby spinach. Mix until spinach has wilted and is well incorporated with the soup.
