Upside Down Frito Pie

This one pan upside down Frito pie is a delicious weeknight meal that comes together quickly using simple pantry staples. With a zesty combination of perfectly seasoned ground beef, beans and diced tomatoes that is topped with melted cheese and crunchy Fritos, it is full of flavor and goodness!

Ingredients
  

  • 1 lb. ground beef (lean, 90/10)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp pepper
  • 8 oz tomato sauce
  • 14.5 oz diced tomatoes
  • 15.5 oz pinto beans drained & rinsed
  • 1 1/2 cups shredded cheddar cheese
  • 2-3 cups Fritos corn chips

Instructions
 

  • In a frying pan, add together ground beef and seasonings.
  • Cook ground beef until completely cooked through.
  • While beef is cooking, drain and rinse pinto beans and set aside.
  • When ground beef is done, reduce heat to medium low and add tomato sauce, diced tomatoes and pinto beans.
  • Let simmer for 3-5 minutes to allow flavors to blend.
  • Remove from heat.
  • Top with shredded cheese and Fritos and serve.
  • Enjoy!
