Turn leftover turkey into the best and most delicious turkey noodle soup! This homemade turkey noodle soup is the ultimate comfort food! Loaded with homemade egg noodles, soft vegetables and tender pieces of turkey, this will be your new favorite soup!
Remove all meat from the turkey. Shred the turkey and place in an airtight container and place in the fridge for later. Do not discard the turkey carcass.
In a large stock pot, add in water, turkey carcass, whole celery, carrots, garlic cloves, and chicken bouillon cubes. Cover and bring to a boil.
When the water begins to boil, reduce heat to low and let simmer for 2 hours.
After 2 hours, remove the turkey carcass and any bones that are in the broth along with the pieces of celery, carrots and garlic cloves and discard.
Slice the carrots and celery and add to the broth.
Add 3-4 cups shredded turkey to soup along with onion powder, garlic powder and pepper.
Turn to medium heat and cook until carrots and celery are soft.
Add in egg noodles and cook until egg noodles are soft.
