These steak fajita rice bowls are protein-packed, healthy and delicious, made with tender steak, classic fajita peppers and onions, and seasoned rice. Perfect for meal prep or an easy family dinner, this recipe is filling, flavorful, and great for busy weeknights.
Remove the steak from the package and pat dry with paper towels.
Slice into thin strips and place in a bowl.
Drizzle with 1 tablespoon of olive oil, add the seasonings, and toss until evenly coated. Set aside.
Slice the peppers and onions and set aside.
Heat 1-2 tablespoons oil in a large frying pan over medium heat and add the peppers and onions. Cook, stirring frequently, until softened. Remove from the pan and set aside.
Increase the heat to medium-high and add the steak to the same pan. Sear on one side until golden brown, then flip and sear the other side. Continue cooking for 2–3 minutes, or until the steak is cooked to your liking.
Return the peppers and onions to the pan and stir to combine. Remove from heat.
To assemble the fajita bowls, spoon rice into the bottom of each bowl. Top with steak and vegetables, tomatoes, corn, and black beans. Drizzle with cilantro ranch dressing and serve.
