2 lbs. ribeye steak 2 tsp kosher salt 1 tsp pepper 1 tsp minced garlic butter olive oil
Pat dry steak with paper towels.
Cut steak into small bite sized pieces and season generously with olive oil, kosher salt and pepper. Set aside and let sit.
Preheat a frying pan or skillet over medium-high heat until pan is very hot.
Add 1 tablespoons butter and 1 tablespoon olive oil to pan.
Place the steak bites in the pan and don't touch them for 1-2 minutes . (this creates the golden brown crust).
Turn the bites and cook another 1-2 minutes on the other side until they're browned but still tender inside.
In the last 30 seconds, add a small pat of butter and 1 tsp minced garlic to the pan , swirling to coat the steak bites.
Remove from heat and let the steak bites rest for 3-5 minutes to keep them juicy and delicious.
