Spanish Rice

Ingredients
  

  • 2 cups long grain Jasmine rice
  • 1/8 cup oil
  • 3 cups hot water
  • 1 chicken bouillon cube
  • 8 oz. tomato sauce
  • 1 tsp salt
  • 1 tsp minced garlic
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper

Instructions
 

  • In a large stock pot, heat oil.
  • Add rice to heated oil and mix until rice is well coated with oil.
  • Let rice cook over medium high heat for a few minutes, stirring frequently until the rice begins to turn golden brown.
  • Once rice is browned, add water to the rice.
  • Add in remaining ingredients and mix well.
  • When all ingredients have been added, reduce heat to a simmer and cover.
  • Simmer for 25-30 minutes stirring frequently.
  • Cook until the rice is softened, and all the liquid has been absorbed.
  • Remove from heat and fluff with a fork.
  • Serve with your favorite Mexican dish.
