Ingredients
  

  • 6-7 medium russet potatoes (makes about 6-7 cups of sliced potatoes)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp kosher salt
  • 1 tsp pepper
  • 10.5 oz. condensed cream of chicken soup
  • cups milk (divided)
  • cups shredded cheddar cheese
  • crumbled bacon (optional)

Instructions
 

  • Peel and thinly slice the potatoes.
  • Lightly spray the bottom of your slow cooker with cooking spray. Add half of the potatoes in an even layer.
  • Sprinkle half of the seasonings over top of the potatoes (½ tsp onion powder, ½ tsp garlic powder, 1 tsp kosher salt, and ½ tsp pepper).
  • Add the remaining potatoes on top, then sprinkle with the remaining seasonings.
  • In a mixing bowl, whisk together the cream of chicken soup and 1 cup of milk until smooth. Pour evenly over the potatoes.
  • Cover and cook on high for 2–3 hours or on low for 4–5 hours, until the potatoes are tender.
  • Remove the lid and stir in 2 cups of shredded cheddar cheese and ¾ cup of milk until well combined.
  • Top with additional shredded cheese and crumbled bacon. Let sit for a few minutes until the cheese is melted, then serve.
