Slow Cooker Potato Soup

Ingredients
  

  • 8 russet potatoes
  • 3 (14.5 oz) cans chicken broth
  • 2 tsp minced garlic
  • 1 tsp onion powder
  • ½ tbsp seasoned salt
  • ½ tsp pepper
  • 8 oz. cream cheese
  • 1 cup whole milk
  • 2 cups shredded medium cheddar cheese
  • 1 lb. bacon

Instructions
 

  • Peel potatoes and cut into large chunks. Add to the bottom of a slow cooker.
  • Add chicken broth, seasonings, and cream cheese to slow cooker. Cover and cook on low for 4-6 hours.
  • Remove cover and roughly mash potatoes to desired consistency, blending more if you prefer a thicker, creamier soup.
  • Stir in the milk and shredded cheese and mix well. Replace the cover on the slow cooker while you cook the bacon.
  • Cook bacon in a skillet over medium heat until crispy, then transfer to a paper towel-lined plate. Once cooled, crumble the bacon and stir it into the soup just before serving.
  • Serve and enjoy!
