Slow Cooker Polynesian BBQ Chicken
This easy and delicious dump and go slow cooker Polynesian BBQ chicken comes together in less than 10 minutes. With a sweet and tangy BBQ sauce, pineapple and simple pantry ingredients, this recipe is packed with flavor!

2 lbs. chicken breasts 1 cup BBQ sauce 1 cup crushed pineapple (drained) 1 tsp onion powder 2 tsp minced garlic 1 tbsp soy sauce 1 tsp kosher salt 1/2 cup finely diced yellow bell pepper 1/4 cup water 2 tbsp cornstarch 8 count hoagie buns (or hard rolls)
Place chicken breasts in the bottom of a slow cooker.
Dump in all remaining ingredients except cornstarch and water.
Cover and cook on low for 6-8 hours.
30 minutes before serving, remove chicken and shred.
Return chicken to slow cooker.
In a small cup or bowl, make a slurry by mixing together cornstarch and water and stirring until cornstarch is completely dissolved.
Pour the slurry over top of chicken and mix until well incorporated.
Cover and cook for an additional 30 minutes on high until sauce thickens to desired consistency.
Spoon desired amount of chicken onto hoagie buns or hard rolls and serve.
