Slow Cooker Polynesian BBQ Chicken

This easy and delicious dump and go slow cooker Polynesian BBQ chicken comes together in less than 10 minutes. With a sweet and tangy BBQ sauce, pineapple and simple pantry ingredients, this recipe is packed with flavor!

Equipment

Ingredients
  

  • 2 lbs. chicken breasts
  • 1 cup BBQ sauce
  • 1 cup crushed pineapple (drained)
  • 1 tsp onion powder
  • 2 tsp minced garlic
  • 1 tbsp soy sauce
  • 1 tsp kosher salt
  • 1/2 cup finely diced yellow bell pepper
  • 1/4 cup water
  • 2 tbsp cornstarch
  • 8 count hoagie buns (or hard rolls)

Instructions
 

  • Place chicken breasts in the bottom of a slow cooker.
  • Dump in all remaining ingredients except cornstarch and water.
  • Cover and cook on low for 6-8 hours.
  • 30 minutes before serving, remove chicken and shred.
  • Return chicken to slow cooker.
  • In a small cup or bowl, make a slurry by mixing together cornstarch and water and stirring until cornstarch is completely dissolved.
  • Pour the slurry over top of chicken and mix until well incorporated.
  • Cover and cook for an additional 30 minutes on high until sauce thickens to desired consistency.
  • Spoon desired amount of chicken onto hoagie buns or hard rolls and serve.
