Ingredients

  • 3-4 lb. pork roast

Rub

  • 1 tsp kosher salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp basil
  • ½ tsp pepper

Sauce Mixture

  • 1 cup crushed pineapple
  • 1 cup chicken broth
  • ¼ cup soy sauce
  • 2 tsp minced garlic
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tbsp brown sugar

Cornstarch Slurry

  • 3 tbsp cornstarch
  • ¼ cup cold water

Instructions

  • Place pork roast in the bottom of slow cooker.
  • Drizzle the pork roast with a few tablespoons of oil, rubbing it over the entire roast to coat.
  • In a small bowl, combine all the seasonings and mix well.
  • Sprinkle the seasoning mixture evenly over the pork roast, coating all sides.
  • In a separate bowl, combine the pineapple, chicken broth, Worcestershire sauce, apple cider vinegar, brown sugar, soy sauce, and minced garlic. Stir until well combined, then pour the mixture over the pork roast.
  • Cover and cook on low for 8–10 hours, or until the pork is incredibly tender and easily pulls apart with a fork.
  • Remove the pork from the slow cooker and discard any large pieces of fat. Shred the pork using two forks, then return it to the slow cooker and stir it into the sauce.
  • In a small bowl, whisk together 3 tablespoons cornstarch and 1/4 cup cold water until smooth to make a slurry.
  • Stir the slurry into the slow cooker. Cover and continue cooking for about 15–20 minutes, or until the sauce has thickened.
  • Serve the pineapple pork roast over rice or mashed potatoes, spooning plenty of that delicious sauce over the top. Enjoy!
