Slow Cooker Ham and Potato Soup
This slow cooker ham and potato soup is a family favorite! It's loaded with creamy potatoes, tender vegetables, diced ham and melted cheddar cheese for an incredibly delicious and cozy soup. It's quick, hearty, and so very delightful.

8 medium russet potatoes 1 cup diced carrots 3 (14.5 oz) cans chicken broth 1 tsp kosher salt 1 tsp onion powder 1 tsp minced garlic 1/2 tsp pepper 2 tsp parsley 3 cups diced ham 1/2 cup whole milk 8 oz. cream cheese, softened 1 cup shredded cheddar cheese
Peel potatoes and carrots and cut into large chunks . Add to the bottom of a slow cooker.
Add chicken broth and seasonings to slow cooker. Cook and cover on low for 4-6 hours.
30 minutes before serving, remove cover and roughly mash potatoes to desired consistency.
Cut cream cheese into small chunks and add to slow cooker.
Add in milk, shredded cheese and ham and mix well. Cover and cook an additional 30 minutes.
When cream cheese has fully melted, stir into the soup so that everything is well mixed .
Remove from heat and top with shredded cheese.
