Slow Cooker Ham and Potato Soup

This slow cooker ham and potato soup is a family favorite! It's loaded with creamy potatoes, tender vegetables, diced ham and melted cheddar cheese for an incredibly delicious and cozy soup. It's quick, hearty, and so very delightful.

Ingredients
  

  • 8 medium russet potatoes
  • 1 cup diced carrots
  • 3 (14.5 oz) cans chicken broth
  • 1 tsp kosher salt
  • 1 tsp onion powder
  • 1 tsp minced garlic
  • 1/2 tsp pepper
  • 2 tsp parsley
  • 3 cups diced ham
  • 1/2 cup whole milk
  • 8 oz. cream cheese, softened
  • 1 cup shredded cheddar cheese

Instructions
 

  • Peel potatoes and carrots and cut into large chunks. Add to the bottom of a slow cooker.
  • Add chicken broth and seasonings to slow cooker. Cook and cover on low for 4-6 hours.
  • 30 minutes before serving, remove cover and roughly mash potatoes to desired consistency.
  • Cut cream cheese into small chunks and add to slow cooker.
  • Add in milk, shredded cheese and ham and mix well. Cover and cook an additional 30 minutes.
  • When cream cheese has fully melted, stir into the soup so that everything is well mixed.
  • Remove from heat and top with shredded cheese.
  • Serve and enjoy!
