Slow Cooker Creamy Taco Soup
This slow cooker creamy taco soup is made with seasoned ground beef, beans, tomatoes, and a rich, creamy broth for bold taco flavor in every bite. 1 lb. ground beef lean, 90/10 1 tsp onion powder 1 tsp garlic powder 1 tsp salt 1 tsp cumin ½ tsp pepper 1 ½ tbsp taco seasoning 15 oz. black beans, drained and rinsed 15 oz. corn, drained 14.5 oz. beef broth 2 (14.5 oz.) cans diced tomatoes 2 tbsp tomato paste 8 oz. cream cheese ½ cup heavy whipping cream Toppings Tortilla strips Shredded cheddar cheese Sour cream Diced avocado or guacamole Chopped cilantro Sliced green onions Jalapeños Pico de gallo Tortilla chips on the side
In a frying pan, combine ground beef and all seasonings. Cook until ground beef is completely cooked through.
When done, remove from heat and add ground beef to slow cooker.
Rinse and drain black beans and add to slow cooker.
Drain corn and add to slow cooker.
Add in beef broth, diced tomatoes and tomato paste. Stir until well combined.
Place the cream cheese on top and cover and cook on low for 4 hours.
After 4 hours, remove cover and add in heavy whipping cream.
Stir all ingredients together until well mixed.
Serve with favorite toppings.
