Slow Cooker Chicken Tortilla Soup

Ingredients
  

  • 2 lb. boneless, skinless chicken thighs
  • 32 oz chicken stock
  • 2 (14.5oz.) cans diced tomatoes
  • 1 tsp onion powder
  • 1 tsp minced garlic
  • 1 tsp kosher salt
  • 1 tsp oregano
  • 1 tsp cumin
  • 1/2 tsp pepper
  • 1/4 tsp chili powder
  • 1 tbsp chopped cilantro
  • 1 (15 oz.) can black beans
  • 1 (15 oz.) can corn

Toppings

  • avocados
  • shredded cheese
  • tortilla strips
  • cilantro
  • jalepenos
  • sour cream

Instructions
 

  • Pour chicken stock in the bottom of a slow cooker.
  • Add in chicken thighs and all seasonings.
  • Rinse and drain black beans and add to slow cooker.
  • Drain corn and add to slow cooker.
  • Cover and cook on low for 6-8 hours.
  • After 6-8 hours, remove cover and shred chicken.
  • Mix so that all ingredients are well incorporated.
  • Serve with desired toppings.
  • Enjoy!
