Slow Cooker Chicken Tortilla Soup

2 lb. boneless, skinless chicken thighs 32 oz chicken stock 2 (14.5oz.) cans diced tomatoes 1 tsp onion powder 1 tsp minced garlic 1 tsp kosher salt 1 tsp oregano 1 tsp cumin 1/2 tsp pepper 1/4 tsp chili powder 1 tbsp chopped cilantro 1 (15 oz.) can black beans 1 (15 oz.) can corn Toppings avocados shredded cheese tortilla strips cilantro jalepenos sour cream
Pour chicken stock in the bottom of a slow cooker.
Add in chicken thighs and all seasonings.
Rinse and drain black beans and add to slow cooker.
Drain corn and add to slow cooker.
Cover and cook on low for 6-8 hours.
After 6-8 hours, remove cover and shred chicken .
Mix so that all ingredients are well incorporated.
Serve with desired toppings.
