Skillet Lasagna
This one pan skillet lasagna has all the best flavors of lasagna but is half of the work and time! Filled with flavorful ground beef, soft noodles, gooey cheese, and simmered in a delicious tomato sauce, this delicious dinner will be on the table in less than 30 minutes.

1 lb. ground beef (lean, 90/10) 1 tbsp Italian seasoning 2 tsp kosher salt 1 tsp minced garlic 1 tsp onion powder 1/2 tsp pepper 2 14.5 oz cans diced tomatoes 8 oz. tomato sauce 2 1/2 cups water 3 cups dry rotini noodles 1 cup cottage cheese 1 1/2 cups shredded mozzarella cheese 1/2 cup shredded parmesan cheese
In a frying pan, combine ground beef and seasonings.
Mix well and cook until beef is completely cooked through .
Add in diced tomatoes, tomato sauce, rotini noodles and water . Cover and simmer for 10-15 minutes until noodles are soft . Stir frequently.
When noodles are soft, remove from heat and add in cottage cheese . Mix until well incorporated.
Sprinkle with mozzarella cheese and parmesan cheese.
