Skillet Chicken Parmesan

Ingredients
  

  • 2 large chicken breasts (8-10 oz.)
  • 1 cup panko breadcrumbs
  • 1 tsp onion salt
  • 1 tsp garlic powder
  • 1 chicken bouillon cube
  • 1 tsp oregano
  • ½ tsp pepper
  • 1 egg
  • 12 oz. spaghetti sauce
  • shredded mozzarella cheese
  • shredded parmesan cheese
  • oil for frying

Instructions
 

  • Place the chicken breasts on a cutting board and cover with plastic wrap.
  • Using a meat mallet, pound the chicken until thin and even in thickness. Set aside.
  • In a shallow bowl, crush the chicken bouillon cube and combine the seasonings and panko breadcrumbs.
  • In a separate bowl, whisk the egg until light and frothy.
  • Heat ⅛ cup of oil in a large frying pan over medium heat.
  • Dip each chicken piece into the egg, then coat evenly with the breadcrumb mixture.
  • Carefully place the chicken in the hot pan.
  • Cook until golden brown on one side, then flip and cook the other side until golden and the internal temperature reaches 160°F.
  • Reduce heat to low. Spoon marinara sauce over each piece of chicken, spreading to cover the top. Sprinkle generously with mozzarella and Parmesan cheese. Cover the pan and let the cheese melt for 1–2 minutes.
  • Remove from heat and serve immediately.
  • Enjoy!
