Shepherd’s Pie 2.0 takes the classic comfort dish to the next level with crispy, golden southern-style fried potatoes and melted cheese instead of traditional mashed potatoes. This kid-friendly twist is packed with savory ground beef and veggies, making it a hearty, satisfying, and irresistible dinner the whole family will love.
In a large skillet, heat a few tablespoons of oil over medium-high heat. Add the potatoes and cook until golden brown and crispy. Remove from the pan and set aside.
In a separate skillet, combine the ground beef, seasonings, and Worcestershire sauce. Cook over medium heat until the beef is fully browned and cooked through.
Reduce the heat to medium-low, sprinkle the flour over the beef mixture, and stir until well incorporated.
Slowly pour in the beef broth, stirring frequently, and let simmer until a thick gravy forms. Remove from heat.
Lightly spray a 9x13-inch baking dish with cooking spray.
Spread half of the crispy potatoes evenly across the bottom.
Layer the frozen vegetables over the potatoes, then spoon the beef mixture on top.
Sprinkle with shredded cheddar cheese, and finish with the remaining crispy potatoes.
Bake for 15–20 minutes, or until the top is golden brown and heated through.
Remove from the oven and let cool slightly before serving.
