Poppyseed Chicken Casserole
This creamy, rich poppyseed chicken casserole is the ultimate comfort food. It's loaded with chicken, a decadent creamy sauce and topped with buttery Ritz crackers that melts in your mouth.

1 rotisserie chicken 4 cups shredded chicken 10.5 oz cream of chicken soup 1 1/2 cups sour cream 1/2 cup butter 2 packages Ritz crackers 1 tbsp poppy seeds
Preheat oven to 375 degrees F and spray a 9"x9" baking dish with cooking spray.
Shred rotisserie chicken into small pieces and set aside.
Combine cream of chicken soup, sour cream, chicken and poppyseeds and mix until well incorporated.
Dump the chicken mixture into the bottom of the 9"x9" baking dish and spread evenly.
Melt butte r in a medium sized bowl and set aside.
In a Ziploc bag, crush Ritz crackers into small pieces.
Add the crushed crackers to the melted butter and coat well.
Spread crackers evenly over top of the chicken mixture .
Sprinkle extra poppyseeds over top of the casserole if desired.
Bake for 25-30 minutes until the top of the poppyseed chicken casserole is golden brown and bubbly.
