Poppyseed Chicken Casserole

This creamy, rich poppyseed chicken casserole is the ultimate comfort food. It's loaded with chicken, a decadent creamy sauce and topped with buttery Ritz crackers that melts in your mouth.

Ingredients
  

  • 1 rotisserie chicken 4 cups shredded chicken
  • 10.5 oz cream of chicken soup
  • 1 1/2 cups sour cream
  • 1/2 cup butter
  • 2 packages Ritz crackers
  • 1 tbsp poppy seeds

Instructions
 

  • Preheat oven to 375 degrees F and spray a 9"x9" baking dish with cooking spray.
  • Shred rotisserie chicken into small pieces and set aside.
  • Combine cream of chicken soup, sour cream, chicken and poppyseeds and mix until well incorporated.
  • Dump the chicken mixture into the bottom of the 9"x9" baking dish and spread evenly.
  • Melt butter in a medium sized bowl and set aside.
  • In a Ziploc bag, crush Ritz crackers into small pieces.
  • Add the crushed crackers to the melted butter and coat well.
  • Spread crackers evenly over top of the chicken mixture.
  • Sprinkle extra poppyseeds over top of the casserole if desired.
  • Bake for 25-30 minutes until the top of the poppyseed chicken casserole is golden brown and bubbly.
