Oatmeal Snickerdoodle Cookies
This is a cookie that you probably have never heard of but will absolutely love! These oatmeal snickerdoodle cookies are a beautiful combination of a traditional oatmeal cookie, and a delicious snickerdoodle cookie drizzled with a divine glaze over top to make one of the BEST cookies there is.

1 cup salted butter, softened 1/2 cup sugar 1/2 cup brown sugar 2 large eggs 1/2 tsp vanilla 1 ½ tsp baking powder 1 tsp baking soda ¼ tsp salt 2 cups flour 2 ½ cups old fashioned oats 1/2 cup sugar 1 ½ tsp cinnamon Glaze Ingredients 1 ½ cup powdered sugar 1/4 tsp vanilla 3-4 tbsp whole milk
Preheat oven to 375 degrees F.
In a stand mixer, combine butter, brown sugar and white sugar and cream together until light and fluffy.
Add in vanilla and eggs and mix until well combined.
Scrape the sides and add in flour, salt, baking soda, baking powder and oatmeal and mix until well incorporated and a soft dough forms.
Combine cinnamon and sugar together in a separate bowl.
Using a medium sized cookie scoop (cookie scoop #40 or 2 tbsp), scoop dough into small balls then roll gently in cinnamon sugar until well coated.
Place on baking sheet lined with parchment paper or a silicone baking mat.
Bake for 8-10 minutes then immediately remove from oven.
Allow cookies to cool.
When cookies are fully cooled, mix together glaze ingredients.
Drizzle desired amount of glaze over top of the cookies.
Let the glaze dry for a few minutes then enjoy!
