Oatmeal Peanut Butter Protein Balls

Ingredients
  

  • 2 cups peanut butter
  • 1 cup raw honey
  • 2 tsp vanilla
  • 2 scoops vanilla protein powder
  • 1 tsp salt
  • 2 cups old fashioned oats
  • 1 cup crisp rice cereal
  • cups semi-sweet chocolate chips

Instructions
 

  • In a large mixing bowl, combine all ingredients except the oats, Rice Krispies cereal, and chocolate chips. Beat until smooth and well combined.
  • Add the oats and Rice Krispies cereal, then mix until fully incorporated.
  • Fold in the chocolate chips.
  • Line a baking sheet with parchment paper and set aside.
  • Using a cookie scoop, portion out 2–3 tablespoons of the mixture, roll into balls, and place on the prepared baking sheet.
  • Repeat until all of the mixture has been used.
  • Refrigerate for at least 1 hour to set.
  • Store protein balls in an airtight container in the refrigerator.
