Line a baking sheet pan (13"x18") with parchment paper and set aside.
Pour the chocolate chips in a microwave-safe bowl and heat in20–30 second intervals, stirring after each one. Continue until the chocolate is mostly melted, then stir until smooth and glossy—this prevents burning and ensures even melting.
When the chocolate is melted, pour it onto a baking sheet lined with parchment paper and spread it evenly.
Place the pan in the fridge for about 30 minutes, or until the chocolate has hardened.
In a separate mixing bowl, combine the oats, peanut butter, and honey, stirring until well combined.
