Loaded Potato Soup

Ingredients
  

  • 8 cups russet potatoes, peeled and roughly chopped
  • 32 oz. chicken broth
  • 1 tsp kosher salt
  • 1 tsp minced garlic
  • 1 tsp onion powder
  • ½ tsp pepper
  • 8 oz. cream cheese
  • 4 tbsp butter
  • 2 cups shredded cheddar cheese
  • cups whole milk

Instructions
 

  • Peel and roughly chop the potatoes.
  • In a large stockpot over medium heat, add the chicken broth and chopped potatoes. Cover and cook for 15–20 minutes, or until the potatoes are fork-tender.
  • Turn off the heat and add the seasonings, butter, and cream cheese. Cover the pot again and let it sit for a few minutes to allow the cream cheese to soften.
  • Using an immersion blender or hand mixer, blend the soup until smooth and creamy.
  • Stir in the shredded cheese until fully melted.
  • Add the milk and mix until well combined.
  • Serve warm and enjoy!
