Homemade Chicken and Dumplings
This creamy homemade chicken and dumplings is quick and delicious! With tender chicken, soft vegetables and made from scratch dumplings, it's irresistibly good!

4 (14.5 oz) cans chicken broth 4 cups rotisserie chicken, shredded 1 tsp onion powder 1 tsp garlic powder 1 tsp paprika 1 tsp salt 1/2 tsp pepper 16 oz. frozen peas and carrots 2 cups heavy whipping cream DUMPLINGS 2 cups flour 4 tsp baking powder 2 tsp sugar 1 tsp salt 2 tbsp butter, softened to room temperature 1 cup milk
Remove all meat from the rotisserie chicken . Shred the chicken and set aside.
In a large stock pot, add in chicken broth and seasonings . Cover and bring to a boil.
In a separate mixing bowl, combine flour, baking powder, sugar and salt and mix until well combined.
Add in butter and mix until butter is well incorporated.
Stir in milk and mix until dough is soft and sticky . Set aside and let sit for 5 minutes.
When the broth begins to boil, add in shredded chicken .
Using a cookie scoop or spoon, scoop 1-2 tablespoons of dough and drop into boiling broth. Repeat until all dumplings have been made.
Cover and cook on medium high for 10 minutes . Do not remove lid during this time.
After 10 minutes, remove lid and add in frozen vegetables. Softly stir into soup . Let cook an additional 2-3 minutes until vegetables are soft.
Remove from heat and add in heavy whipping cream . Softly stir until well incorporated.
Remove from heat and serve.
