These high protein chicken enchiladas are a flavorful twist on a classic comfort food that’s both satisfying and nutritious. Packed with shredded chicken, cottage cheese, and melted cheese, they make the perfect easy, protein-filled dinner for busy nights that even picky eaters will love.
Remove the meat from a rotisserie chicken and shred it into small pieces and add to a mixing bowl.
Add in enchilada sauce, 2 cups shredded cheese, 2 cups of enchilada sauce, cottage cheese and taco seasoning to the mixing bowl. Mix well until all ingredients are well incorporated.
Lay tortillas flat on the counter.
Spoon a few tablespoons of the chicken mixturein the center of each tortilla, then roll up tightly and place seam-side down in the prepared baking dish.
Repeat this process until all enchiladas have been made.
After all the enchiladas are nestled in the baking dish, pour the remaining enchilada sauce evenly over the top and finish with a sprinkle of cheese.
Bake for 20-25 minutes until the tops of the enchiladas are golden brown.
Remove from heat and serve with favorite toppings.
