Ingredients

rotisserie chicken
(4 cups shredded chicken)

gluten free cream of chicken soup

sour cream
1/2
cup
butter

Gluten Free table crackers

tbsp
poppy seeds
Instructions
Preheat oven to 375 degrees F
and spray a 9"x9" baking dish with cooking spray.
Shred rotisserie chicken
into small pieces and set aside.
Combine cream of chicken soup, sour cream,
chicken and poppyseeds and mix
until well incorporated.
Dump the
chicken mixture into the bottom of the 9"x9" baking dish
and spread evenly.
Melt butte
r in a medium sized bowl and set aside.
In a Ziploc bag,
crush crackers
into small pieces.
Add the
crushed crackers to the melted butter and coat well.
Spread crackers
evenly over top of the chicken mixture
.
Sprinkle extra poppyseeds
over top of the casserole if desired.
Bake for 25-30 minutes
until the top of the poppyseed chicken casserole is golden brown and bubbly.
