Gluten Free Pasta Salad

Try this gluten free pasta salad that is full of fresh vegetables, cheese, ham and a bold flavor! It's perfect for picnics, meal prep or a quick lunch. It's a delicious summertime salad everyone will love.

Ingredients
  

  • 8.8 oz Barilla Chickpea Rotini Pasta
  • 1-2 cucumber diced
  • 2 cups grape tomatoes diced
  • 2 cups diced ham
  • 2 cups Colby Jack cheese diced
  • 24 oz Zesty Italian dressing

Instructions
 

  • In a large stock pot, heat water and cook pasta according to package directions.
  • When done, drain and rinse and set aside to cool.
  • Cut tomatoes and cucumbers into small bite sized pieces. Add to a large mixing bowl.
  • Cut ham and cheese into small bite sized pieces and add to mixing bowl.
  • Once pasta has completely cooled, add pasta to mixing bowl.
  • Pour 1-2 cups Zesty Italian Dressing over top of the pasta mixture.
  • Mix until well incorporated.
  • Refrigerate for 1-2 hours before serving.
  • Enjoy!

Notes

Barilla Chickpea Rotini pasta is the pasta that I recommend for this recipe. You can find the link for that here
