Gluten Free German Pancakes

Ingredients
  

  • 5 tbsp butter, salted
  • 6 eggs
  • 1 cup Gluten Free Flour (see below for details)
  • 1 cup milk
  • 1 tsp salt
  • 1 tsp vanilla

Instructions
 

  • Preheat oven to 425 degrees F.
  • Cut butter into 5 tablespoons and place on the bottom of a 9x13" baking dish.
  • Place the baking dish in the oven while it's preheating to allow the butter to melt.
  • When the butter has melted, remove the baking dish from the oven.
  • While the butter is melting, mix together flour, milk, eggs, salt and vanilla in a blender.
  • Pulse a few times until well combined.
  • When the batter is mixed well, pour into the baking dish over top of the butter.
  • Return to the oven and bake for 20-25 minutes until the German pancake is puffed and slightly browned around the edges and in the middle.
  • Remove from oven and top with your favorite toppings.
