Ingredients
  

  • 2 tbsp olive oil
  • cups Jasmine rice
  • cups water
  • 1 tsp salt
  • 1 tsp minced garlic
  • 2 tbsp lime juice
  • ¼ cup chopped cilantro (fresh)

Instructions
 

  • In a medium saucepan, combine the oil and rice, stirring until the rice is evenly coated. Cook for 3–5 minutes, stirring frequently, until the rice begins to lightly brown.
  • Add the water, minced garlic, and salt, and bring to a boil over medium-high heat.
  • Reduce the heat to low, cover, and simmer for 10–15 minutes, or until the water is absorbed and the rice is tender.
  • Remove from the heat and stir in the lime juice and chopped cilantro until well combined.
  • Cover and let sit for 5–10 minutes, then fluff with a fork.
  • Serve and enjoy!
