Chicken Burrito Bowls
These easy chicken burrito bowls are packed with juicy chicken, Spanish rice, corn, beans, tomatoes, and creamy avocado, all drizzled with a flavorful cilantro ranch dressing. This healthy, meal-prep-friendly recipe is simple to make, bursting with fresh flavor, and perfect for busy weeknights or satisfying lunches everyone will crave.

1 chicken breast (about 8-10 oz.) 1 tsp onion powder 1 tsp minced garlic 1 tsp kosher salt 2 tbsp taco seasoning 15 oz. can corn 14.5 oz can black beans Spanish rice
Cut the chicken breasts into small strips and set aside.
In a small bowl, combine the seasonings and coat the chicken evenly.
Heat 2–3 tablespoons of olive oil in a frying pan over medium heat.
Add the seasoned chicken and cook until the internal temperature reaches 160°F and the chicken is golden brown. Remove and set aside.
To assemble the burrito bowls, spoon rice into the bottom of each bowl.
Top with chicken, tomatoes, corn, and black beans.
Drizzle with cilantro ranch dressing and enjoy!
