Chicken Burrito Bowls

These easy chicken burrito bowls are packed with juicy chicken, Spanish rice, corn, beans, tomatoes, and creamy avocado, all drizzled with a flavorful cilantro ranch dressing. Ingredients
  

  • 1 chicken breast (about 8-10 oz.)
  • 1 tsp onion powder
  • 1 tsp minced garlic
  • 1 tsp kosher salt
  • 2 tbsp taco seasoning
  • 15 oz. can corn
  • 14.5 oz can black beans
  • Spanish rice

Instructions
 

  • Cut the chicken breasts into small strips and set aside.
  • In a small bowl, combine the seasonings and coat the chicken evenly.
  • Heat 2–3 tablespoons of olive oil in a frying pan over medium heat.
  • Add the seasoned chicken and cook until the internal temperature reaches 160°F and the chicken is golden brown. Remove and set aside.
  • To assemble the burrito bowls, spoon rice into the bottom of each bowl.
  • Top with chicken, tomatoes, corn, and black beans.
  • Drizzle with cilantro ranch dressing and enjoy!

Notes

This recipe calls for Spanish rice and cilantro lime dressing. I’ve linked both recipes above and within the post, and I promise they’re worth making!
