This slow cooker cheesy sausage potato soup is rich, creamy, and full of familiar flavors that even picky eaters love. With tender potatoes, carrots and savory sausage simmered all day, it’s an easy crockpot dinner that's hearty and fills hungry bellies
In a large stock pot over medium heat, cook the sausage until fully cooked through. Remove from the pot and drain excess grease.
While the sausage is cooking, prepare the vegetables. Peel and slice the potatoes and carrots into bite-sized pieces and finely dice the celery. Add the vegetables to the slow cooker.
Add the cooked sausage to the slow cooker, followed by the seasonings and chicken broth. Stir to combine.
Cover and cook on low for 4–6 hours.
About 30 minutes before serving, whisk together the cornstarch and water to create a slurry, then stir it into the soup.
Add the milk, heavy whipping cream, and shredded cheese. Stir well, cover, and cook for an additional 30 minutes, or until the soup has thickened and the cheese is fully melted.
