Cheeseburger Soup
Kick off soup season with this simple and delicious slow cooker cheeseburger soup. This easy, cheesy soup is filled with tender ground beef, soft potatoes and carrots and loaded with melted gooey cheese. It's both hearty and heavenly.

1 lb. ground beef (lean, 90/10) 1 cup carrots, diced 5 cups diced potatoes 1 tsp onion powder 1 tsp minced garlic 1 tsp basil 1 tsp parsley 1 tsp kosher salt 1/2 tsp pepper 2 14.5oz cans chicken broth 1 1/2 cups whole milk 1/4 cup sour cream 3 cups shredded cheddar cheese 1/4 cup water 3 tbsp cornstarch crumbled bacon optional
In a frying pan, combine ground beef and all seasonings. Cook until ground beef is completely cooked through.
When done, remove from heat and add ground beef to slow cooker.
Add in diced potatoes, carrots, and chicken broth .
Cover and cook on low for 8 hours or on high for 4-6 hours.
After 8 hours, remove cover and add in milk, sour cream and cheddar cheese. Stir until well incorporated.
Mix together 1/4 cup water and 3 tablespoons cornstarch to create a slurry. Add to soup and stir until soup thickens.
Top with crumbled bacon and shredded cheese and serve.
