Baked Apple Fritters

Baked apple fritters are the perfect fall treat! Also known as apple donuts, these apple fritters are easy to make and less messy than frying! They're loaded with delicious, sweet chunks of fresh apples baked in a cinnamon flavored batter and topped with a sweet glaze to make a divine and savory treat!

Ingredients
  

  • 2 cups finely diced apples
  • 1 tbsp lemon juice
  • 2 cups flour
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1/2 cup whole milk
  • 1 tsp vanilla
  • 2 tbsp butter melted

GLAZE

  • 1 cup powdered sugar
  • 2 tbsp whole milk
  • 1 tsp vanilla

Instructions
 

  • Preheat oven to 400 degrees F.
  • Peel apples and dice into very small chunks. Add apples to a mixing bowl and drizzle with lemon juice. Mix until apples are well coated. Set aside.
  • In a bowl, combine dry ingredients. Mix until well incorporated.
  • In a separate bowl, mix together milk, egg and vanilla. Whisk until well combined.
  • Add the wet ingredients to the dry ingredients and mix until combined.
  • Melt butter in a bowl and add to batter. Mix until butter is well incorporated.
  • Fold in diced apples until just combined.
  • Using a cookie scoop that holds about two tablespoons of batter, scoop apple fritter batter onto a prepared baking sheet lined with a silicone baking mat or parchment paper. Arrange the batter so that the apple fritters can expand slightly during cooking.
  • Bake for 12-14 minutes or until the tops of the fritters are slightly brown and when a toothpick is inserted into the middle, comes out clean.
  • Remove from heat and let cool.
  • In a small bowl, combine powdered sugar, 2 tablespoons milk and teaspoon vanilla. Whisk until smooth.
  • When apple fritters have cooled, drizzle glaze over top of apple fritters.
  • Enjoy!
