This homemade chicken noodle soup is made completely from scratch. It sounds intimidating but I promise it's easier than you think! Made with homemade broth, and egg noodles and loaded with tender carrots, celery, and shredded chicken, this recipe will be your new favorite chicken noodle recipe.
Remove all meat from the rotisserie chicken. Shred the chicken and place in an airtight container and place in the fridge for later. Do not discard the chicken carcass.
In a large stock pot, add in water, chicken carcass, whole celery, carrots, garlic cloves, and chicken bouillon cubes. Cover and bring to a boil.
When the water begins to boil, reduce heat to low and let simmer for 2 hours.
After 2 hours, remove the chicken carcass and any bones that are in the broth along with the pieces of celery, carrots and garlic cloves and discard.
Slice the carrots and celery and add to the chicken broth.
Add 3-4 cups shredded chicken to soup along with onion powder, garlic powder and pepper.
Turn to medium heat and cook until carrots and celery are soft.
Add in egg noodles and cook until egg noodles are soft.
