Turkey Noodle Soup Recipe

Thanksgiving is just around the corner and if you’re like me, you’re compiling a list of things to make and shop for. All the things. Well, once you get through the big day and have your feast, there are always leftovers, especially turkey leftovers. I don’t know about you, but my family are not huge fans of turkey, at all. It’s a miracle if I can get my boys to have a slice on Thanksgiving to be honest. But ya know, traditions. And we always end up with a bunch of turkey leftovers.

One year, while at my parents’ house in Wyoming, after we had had our fill of turkey sandwiches, my dad decided he was going to make some turkey noodle soup. It was seriously amazing! And better yet, my kids loved it! So now, it’s our tradition, that we save the leftover turkey and have turkey noodle soup the day after. I have since made a few tweaks to this soup to make it even better. My hope is that now instead of wondering what to do with those turkey leftovers, you will be excited to make this soup!

What Ingredients Are in Turkey Noodle Soup?

  • Shredded Turkey – Put that leftover Thanksgiving turkey to good use! Use as little or as much as you would like.
  • Carrots – I use both whole carrots and sliced carrots for this turkey noodle soup. I add whole carrots to the broth to add flavor, then after the broth has simmered for a few hours, I will then remove the whole carrots and then add my soup ingredients. This is when I will add sliced carrots and celery, the shredded turkey and then the homemade noodles.
  • Celery – As mentioned before, I add in a few whole celery spears with the broth to add flavor. Later, take them out and add in the sliced celery.
  • Garlic Cloves – I love to add in a few cloves of garlic to add some extra flavor to the broth. You will also pull these out later on.
  • Onion Powder – I love using onion powder. It gives a nice subtle flavor here without being too overpowering.
  • Garlic Powder – Even though we add in garlic cloves, I still add in some garlic powder as well for a little added flavor, so the broth isn’t bland.
  • Chicken Bouillon – Bouillon cubes are my go-to when I want to add a lot of flavors in soups. They are made up of dehydrated meat, vegetables, salt and other seasonings in this little, tiny square that have a lot of flavor.

  • Egg Noodles – I make my own homemade egg noodles that my kids say are the very best part of this soup. You can find that recipe here. If you don’t want to spend the time to make your own egg noodles, you can use prepackages ones.

Recipe for Turkey Noodle Soup

  1. Remove all meat from the turkey. Shred the turkey and place in an airtight container and place in the fridge for later. Do not discard the turkey carcass.
  2. In a large stock pot, add in water, turkey carcass, whole celery, carrots, garlic cloves, and chicken bouillon cubes. Cover and bring to a boil. When the water begins to boil, reduce heat to low and let simmer for 2 hours.
  3. After 2 hours, remove the turkey carcass and any bones that are in the broth along with the pieces of celery, carrots and garlic cloves and discard.
  4. Slice the carrots and celery and add to the broth.
  5. Add 3-4 cups shredded turkey to soup along with onion powder, garlic powder and pepper.
  6. Turn to medium heat and cook until carrots and celery are soft.
  7. Add in egg noodles and cook until egg noodles are soft.
  8. Remove from heat and serve.
  9. Enjoy!

How to Store Turkey Noodle Soup.

If there are any leftovers, I will store them in an airtight container in the refrigerator for up to 5 days. To reheat the soup, you can either pop it in the microwave or heat it on the stove.

  • 3-4 cups leftover turkey
  • 16 cups water
  • 5 whole carrots
  • 5 celery spears
  • 3 garlic cloves
  • 10 chicken bouillon cubes
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp pepper
  • 3 cups sliced carrots
  • 1-2 cups sliced celery
  • 16 oz egg noodles

Instructions
