Steak and Rice Bowls

Steak fajitas are probably in the top 5 of my favorite dinners every. Shameless plug here, but I have an amazing, mouthwatering recipe for sheet pan steak fajitas here. However, I found myself often times, just adding everything to a bowl instead of assembling fajitas. My kids are also super picky, so if I didn’t make homemade flour tortillas to go with fajitas, they just wanted it in a bowl too. I decided to revamp my fajitas recipe into an epic steak fajita bowl, and it did not disappoint.

These steak fajita bowls are easy, healthy, and incredibly delicious. You can load them up with everything you’ve got, or for the small people, just add the things they love. I love that they’re completely customizable, which makes dinner so much less stressful. Serve everything buffet-style and let everyone build their own bowl, whether they want extra steak, more rice, or just a few toppings. It’s a simple way to keep both kids and adults happy while still getting a nutritious meal on the table.

What Ingredients Are in Steak Fajita Bowls?

  • Sirloin Steak or Ribeye Steak – We use our homegrown regeneratively raised beef so we have access to lots of delicious beef. I will use either sirloin steak or ribeyes. Both work great and are so delicious.
  • Spanish Rice – You don’t have to use Spanish rice, you can use any kind of cooked rice but I promise these steak fajita bowls will be so much yummier with it! I have a full recipe here on how to make the easiest and most delicious Spanish rice.
  • Bell Peppers – I love to use yellow, orange and red bell peppers for this recipe. The sweet peppers add so much flavor without being bitter like green ones sometimes can be.
  • Onions – For our family, onions never are included in my recipes because my family hates them, but you can add some onions to this bowl as well.
  • Corn
  • Black Beans
  • Diced Tomatoes
  • Cilantro Ranch – If you are going to make these fajita bowls, I’m just going to say, don’t skip out on the cilantro ranch dressing. Holy cow it’s good. It’s super easy to make, you just throw all the ingredients in the blender and it’s good to go. Get my recipe for cilantro ranch dressing here.

Tools You’ll Need

Steak Fajita Bowls Recipe

  1. Remove the steak from the package and pat dry with paper towels.
  2. Slice into thin strips and place in a bowl.
  3. Drizzle with 1 tablespoon of olive oil, add the seasonings, and toss until evenly coated. Set aside.
  4. Slice the peppers and onions and set aside.
  5. Heat 1-2 tablespoons oil in a large frying pan over medium heat and add the peppers and onions. Cook, stirring frequently, until softened. Remove from the pan and set aside.
  6. Increase the heat to medium-high and add the steak to the same pan. Sear on one side until golden brown, then flip and sear the other side. Continue cooking for 2–3 minutes, or until the steak is cooked to your liking.
  7. Return the peppers and onions to the pan and stir to combine. Remove from heat.
  8. To assemble the fajita bowls, spoon rice into the bottom of each bowl. Top with steak and vegetables, tomatoes, corn, and black beans. Drizzle with cilantro ranch dressing and serve.

Gluten Free Steak Fajita Bowls

This recipe is gluten free! I do always caution however, that you check to make sure that the ingredients YOU are using are indeed gluten free. Taco seasoning generally isn’t gluten free, so I make my own taco seasoning. It’s the only taco seasoning that I use. Get my recipe here.

Storage and Reheating

The best part about this recipe, is that it makes great leftovers! I love to make meal prep this recipe for easy lunches during the week.

Storage:
Allow the steak fajita bowl components to cool completely before storing. Store the steak and vegetables in an airtight container in the refrigerator for up to 4 days. Keep rice and toppings stored separately for best texture. If using dressing, store it in a separate container and add just before serving.

Reheating:
Reheat the steak, vegetables, and rice in the microwave in 30–45 second intervals, stirring between each, until heated through. You can also reheat the steak and vegetables in a skillet over medium heat until warm. Add fresh toppings and drizzle with dressing after reheating.

  • 1 lb. sirloin steak (lean, 90/10)
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 onion (small)
  • 1 tsp onion powder
  • 1 tsp minced garlic
  • 1 tsp kosher salt
  • 2 tbsp taco seasoning
  • 15 oz. can corn
  • 14.5 oz can black beans
  • Spanish rice

Notes
