If you are in a very busy season of life, this slow cooker taco soup recipe is for you. Seriously, it could not be easier to throw together. My family loves tacos, but sometimes, our days are so busy that I don’t even have enough time to make tacos. On those days that I am running all over the place until the very minute it’s dinnertime, this is one of my favorite recipes to make. I brown some ground beef, dump all the ingredients in a slow cooker, and dinner is ready for us when we walk in the door. It’s very much appreciated when there are hungry boys howling that they are famished.

What Ingredients Are in Slow Cooker Taco Soup?
- Ground Beef – I use our delicious grass-finished beef that we raise. (You can find that here.) It’s incredibly nutrient dense and so flavorful. Our ground beef is a lean blend of 90/10. You can use any type of ground beef that you would like.
- Diced Tomatoes – This recipe has a lot of flavor but not a lot of spiciness to it. If you want to add a little more spice, you can substitute regular diced tomatoes with fire roasted diced tomatoes.
- Tomato Sauce – Tomato sauce helps to thicken the soup.
- Black Beans
- Corn
- Beef Broth – Rather than using water, I like to use beef broth in my soup recipes to add some yummy flavor to the base of the soup.
- Taco Seasoning – I always use my homemade taco seasoning recipe which is so yummy! You can also use the pre-packaged taco seasoning as well.
- Onion Powder – You can use onion powder or onions in this recipe. My family despises onions, so I stick to using onion powder in my recipes.
- Garlic Powder – I love using garlic powder in Mexican dishes. It really enhances the flavor.
- Cumin – Cumin has such a great flavor in Mexican dishes. My kids love flavor but not spiciness, so I added a little more cumin.
- Salt
- Pepper
- Shredded Cheddar Cheese – If you have time, shred some cheese by hand. Pre-shredded cheese has a waxy substance on it to prevent it from caking while in the package. It makes it harder for it to melt in dishes. I always, always buy cheese in the bricks and shred it by hand.
- Toppings – Fritos, sour cream, avocados, cilantro, etc…

Slow Cooker Taco Soup Recipe
- In a frying pan, combine ground beef and all seasonings. Cook until ground beef is completely cooked through.
- When done, remove from heat and add ground beef to slow cooker.
- Rinse and drain black beans and add to slow cooker.
- Drain corn and add to slow cooker.
- Add in beef broth, diced tomatoes and tomato sauce.
- Cover and cook on low for 8 hours or on high for 4-6 hours.
- When done, remove cover and stir.
- Serve with favorite toppings.

Gluten Free Slow Cooker Taco Soup
This slow cooker taco soup is gluten free! I do, however, always caution to make sure that the ingredients that YOU are using are indeed gluten free. One thing to take into consideration is that taco seasoning is not gluten free. Therefore, you will need to find a gluten free taco seasoning or you can use my homemade taco seasoning recipe found here.
How to Store Slow Cooker Taco Soup
Store leftover taco soup in an airtight container in the refrigerator for up to 5 days. To reheat the soup, you can either pop it in the microwave or heat it on the stove.

Ingredients
- 1 lb. ground beef (lean, 90/10)
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp cumin
- 1/2 tsp pepper
- 1 1/2 tbsp taco seasoning
- 1 (15 oz.) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (14.5 oz) can beef broth
- 2 (14.5 oz) cans diced tomatoes
- 1 (8 oz.) can tomato sauce
- shredded cheddar cheese
Instructions
