It’s soup season friends and I am here for all of it! I love a cozy soup when it gets cold outside. This delicious slow cooker potato soup is one of the easiest soups to make, yet it so fulfilling and flavorful. Let me just say this, it’s full of carbs and comfort and I am not ashamed to admit that one bit.

This potato soup is not only hearty and comforting, but also incredibly kid friendly! With its creamy texture, cheesy flavor and bits of bacon, even picky eaters will happily dig in. Plys, it’s an easy way to serve up a filling meal that whole family will love.

What Ingredients Are in Slow Cooker Potato Soup?

  • Potatoes – For this recipe, I like to use russet potatoes. Can you use any potato you have on hand? Absolutely! Yellow potatoes or red potatoes also work for this recipe.
  • Chicken Broth – This is going to be the base of your soup.
  • Whole Milk – Whole milk is so yummy! It has extra fat which means extra flavor. I always use whole milk in all of my recipes.
  • Cream Cheese – Cream cheese makes this soup extra rich and creamy!
  • Shredded Cheddar Cheese – If you have time, shred some cheese by hand. Pre-shredded cheese has a waxy substance on it to prevent it from caking while in the package. It makes it harder for it to melt in dishes. I always, always buy cheese in the bricks and manually shred it.
  • Bacon – I use a full pound of bacon in this soup. We don’t skimp on the good stuff.

Slow Cooker Potato Soup Recipe

  1. Peel potatoes and cut into large chunks. Add to the bottom of a slow cooker.
  2. Add chicken broth, seasonings, and cream cheese to slow cooker. Cover and cook on low for 4-6 hours.
  3. Remove cover and roughly mash potatoes to desired consistency, blending more if you prefer a thicker, creamier soup.
  4. Stir in the milk and shredded cheese and mix well. Replace the cover on the slow cooker while you cook the bacon.
  5. Cook bacon in a skillet over medium heat until crispy, then transfer to a paper towel-lined plate. Once cooled, crumble the bacon and stir it into the soup just before serving.
  6. Serve and enjoy!

Gluten Free Potato Soup

This is going to be your new favorite gluten free soup! Everything is gluten free in this recipe. It’s so easy! I do, however, always caution to make sure that the ingredients that YOU are using are indeed gluten free.

Storage and Reheating

If there are any leftovers, I will store them in an airtight container in the refrigerator for up to 5 days. To reheat the soup, you can either pop it in the microwave or heat it on the stove.

  • 1 tsp onion powder

  • 8 oz. cream cheese

  • 1 lb. bacon
