This slow cooker Polynesian BBQ Chicken is such a good recipe when you’re short on time. It’s a sweeter version of a pulled chicken sandwich that is so simple and absolutely delicious! This is also a great summer recipe so that you don’t have to heat up your kitchen for dinnertime.
My boys are usually very picky about chicken recipes, (hence why there aren’t many on my site), and they really enjoy this one! You can serve this chicken on any type of bun, or you can make my homemade hamburger buns to go with this recipe!

What Ingredients Are in Slow Cooker Polynesian BBQ Chicken?
- Chicken Breasts
- Barbeque Sauce – My favorite barbeque sauce is Sweet Baby Rays. It has a great flavor, and my kids love it. It’s also gluten free which is helpful for my gluten free friends.
- Soy Sauce
- Crushed Pineapple – I like to use crushed pineapple because my kids don’t love the texture of warm pineapple. So, this is how I still bring that sweet flavor of pineapple to the recipe without my kids complaining.
- Yellow Bell Pepper – Yellow bell pepper also brings a little texture and flavor to this recipe. I chop it super fine, again, so that my kids have no idea that peppers are in this recipe.
- Rolls – I like to use hoagie buns or hard rolls for this recipe. If you have time, you can make my homemade hamburger buns that really make this recipe even better!

Recipe for Slow Cooker Polynesian BBQ Chicken
- Place chicken breasts in the bottom of a slow cooker.
- Dump in all remaining ingredients except cornstarch and water.
- Cover and cook on low for 6-8 hours.
- 30 minutes before serving, remove chicken and shred.
- Return chicken to slow cooker.
- In a small cup or bowl, make a slurry by mixing together cornstarch and water and stirring until cornstarch is completely dissolved.
- Pour the slurry over top of chicken and mix until well incorporated.
- Cover and cook for an additional 30 minutes on high until sauce thickens to desired consistency.
- Spoon desired amount of chicken onto hoagie buns or hard rolls and serve.
- Enjoy!

Gluten Free Polynesian BBQ Chicken
This recipe is gluten free! I do always caution however, that you check to make sure that the ingredients YOU are using are indeed gluten free. Please note that barbeque sauce is not usually gluten free. I used Sweet Baby Rays BBQ sauce for this recipe which is a gluten free BBQ sauce.
How to Store Slow Cooker Polynesian BBQ Chicken
The best part about this recipe, is that it makes great leftovers! Store it in an airtight container in the fridge for up to 5 days. To reheat, spoon desired amount into a bowl and microwave or reheat on the stove in a saucepan then serve on a roll.

- 1 cup BBQ sauce
- 1 cup crushed pineapple (drained)
- 1 tsp onion powder
- 2 tsp minced garlic
- 1 tbsp soy sauce
- 1 tsp kosher salt
- 1/2 cup finely diced yellow bell pepper
- 1/4 cup water
- 2 tbsp cornstarch
- 8 count hoagie buns (or hard rolls)
