Ground Beef Slow Cooker Tacos

My family loves tacos! And when I have the time, I like to go all out. I’m talking homemade flour tortillas, cilantro ranch dressing, all the best toppings, etc. But, let’s be honest, the older my kids get, and the more things they’re involved in, not including helping on the ranch, that doesn’t happen often. The other day, my kids wanted tacos for dinner. It didn’t happen that night, but I promised tacos for dinner the next day. The only problem was, we were gathering cows the next day, so I wasn’t going to be home until late. I decided, I was just going to throw everything in a slow cooker and go. And you know what? It was amazing! I’m seriously doing this every single time now.

If you have extra time, here are a few things that makes these tacos amazing. First, I make my own taco seasoning which makes a huge difference in flavor, then I also add some homemade salsa to it to make the meat so tender and soft. Then if you’re really an overachiever, you can make my homemade flour tortillas to just knock things out of the park. And finally, top these slow cooker tacos with some cilantro ranch dressing and you are just winning at life at this point.

What Ingredients Are in Ground Beef Tacos?

  • Ground Beef – I use our delicious grass-finished beef that we raise. (You can find that here.) It’s incredibly nutrient dense and so flavorful. Our ground beef is a lean blend of 90/10. You can use any type of ground beef that you would like.
  • Taco Seasoning – I always use my homemade taco seasoning recipe which is so yummy! You can also use the pre-packaged taco seasoning as well.
  • Salsa – To keep the ground beef moist while in the slow cooker, I add some salsa.
  • Shredded Cheese – I usually use the Mexican cheese blend, but if I don’t have that, I just use whatever cheese is on hand.
  • Tortillas – As mentioned above, most of the time I make my own tortillas. You can find that recipe here. However, use whatever you would like. If I don’t have time to make homemade tortillas, I like to use the uncooked tortillas. They just taste better than the prepackaged, already cooked flour tortillas.
  • Toppings – Tomatoes, sour cream, avocados, lettuce, cilantro, etc…

Ground Beef Slow Cooker Tacos Recipe

  1. Place the ground beef in the bottom of the slow cooker.
  2. Add the salsa and seasonings. Use a spoon or meat chopper to break up the ground beef and stir until well combined.
  3. Cover and cook on low for 4–6 hours, or until the beef is fully cooked and tender.
  4. Remove the lid and stir the beef mixture.
  5. Assemble tacos and serve with your favorite toppings.
  6. Enjoy!

Gluten Free Ground Beef Tacos

This recipe is gluten free if you use my homemade taco seasoning blend. If you are using a taco seasoning packet, be sure to double check the ingredients to make sure they are gluten free. Also, instead of using flour tortillas, I switch to using corn tortillas.

How to Store Ground Beef Tacos

Store the leftover taco meat in an airtight container in the refrigerator for up to 5 days. Premade tacos are not usually the best to reheat, so when we have leftover tacos, we just heat things up individually.

  • 1 tsp minced garlic
  • 2 tbsp taco seasoning
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • ½ cup salsa
  • 1 package flour tortillas

Toppings

  • shredded cheese
  • salsa
  • tomatoes
  • lettuce
  • avocados
  • sour cream

Instructions
