If I’m being totally honest, my husband and boys are not huge soup lovers. UNLESS, the soup is hearty and filling. My boys just do not get full of soup and then they are raiding my pantry 20 minutes later. I on the other hand, love soup. So, to make all parties involved happy, I make soups that are loaded with goodness so it fills you right up.

This slow cooker cheeseburger soup IS the hearty and filling soup that makes everyone at my house happy. It’s also incredibly easy! I make this in the morning, and it cooks low and slow all day. When we finally file into the house at night, all I have to do is add some cheese and my cornstarch slurry to thicken it up and dinner is served in less than 5 minutes.

What Ingredients Are in Cheeseburger Soup?

  • Ground Beef – I use our delicious grass-finished beef that we raise. (You can find that here.) It’s incredibly nutrient dense and so flavorful. Our ground beef is a lean blend of 90/10. You can use any type of ground beef that you would like.
  • Potatoes – For this recipe, I like to use red potatoes. Does it matter? Probably not. But, I think red potatoes are a little sweeter, so I like to use them for certain soups like this one.
  • Carrots – Yes, I am that mom that likes to sneak in extra vegetables into my kids food without them noticing. I like to add carrots not just because they are so good for you but also because it gives this soup extra flavor and sweetness.
  • Minced Garlic – There really isn’t a dinner recipe that I don’t add minced garlic. It is just too good at giving a great flavor to food.
  • Onion Powder – To bring in the flavors of a traditional cheeseburger, I add in some onion powder.
  • Chicken Broth – This is the base and the liquid of your soup.
  • Basil – Basil is has a distinct peppery/sweet taste. It really brings in some delicious flavor to this cheeseburger soup.
  • Parsley – Parsley is also a great herb to add to soups. Not only is it really flavorful, it is very aromatic which makes your kitchen smell heavenly!
  • Kosher Salt
  • Pepper
  • Whole Milk – I will always tell you to use whole milk. I am a BIG whole milk fan. The extra fat in the milk adds extra flavor and goodness to your dishes. Plus, as a nurse and a mom, it’s just better for you to drink!
  • Sour Cream – Sour cream adds some creaminess and also a tiny tang to this soup.
  • Shredded Cheddar Cheese – If you have time, shred some cheese by hand. Pre-shredded cheese has a waxy substance on it to prevent it from caking while in the package. It makes it harder for it to melt in dishes. I always, always buy cheese in the bricks and manually shred it.

Cheeseburger Soup Recipe

  1. In a frying pan, combine ground beef and all seasonings. Cook until ground beef is completely cooked through.
  2. When done, remove from heat and add ground beef to slow cooker.
  3. Add in diced potatoes, carrots, and chicken broth.
  4. Cover and cook on low for 8 hours or on high for 4-6 hours.
  5. After 8 hours, remove cover and add in milk, sour cream and cheddar cheese. Stir until well incorporated.
  6. Mix together 1/4 cup water and 3 tablespoons cornstarch to create a slurry. Add to soup and stir until soup thickens.
  7. Top with crumbled bacon and shredded cheese and serve.
  8. Enjoy!

Guess what? This slow cooker cheeseburger soup is gluten free! I do, however, always caution to make sure that the ingredients that YOU are using are indeed gluten free.

How to Store Cheeseburger Soup

If there are any leftovers, I will store them in an airtight container in the refrigerator for up to 5 days. To reheat the soup, you can either pop it in the microwave or heat it on the stove.

  • 1 lb. ground beef (lean, 90/10)
  • 1 cup carrots, diced
  • 5 cups diced potatoes
  • 1 tsp onion powder
  • 1 tsp minced garlic
  • 1 tsp basil
  • 1 tsp parsley
  • 1 tsp kosher salt
  • 1/2 tsp pepper
  • 2 14.5oz cans chicken broth
  • 1 1/2 cups whole milk
  • 1/4 cup sour cream
  • 3 cups shredded cheddar cheese
  • 1/4 cup water
  • 3 tbsp cornstarch
  • crumbled bacon optional
