Skillet Lasagna Recipe

My boys love lasagna, and so do I! But frankly, I rarely have an hour and a half to make my lasagna recipe from scratch. As delicious as lasagna is, let’s be honest, making it from scratch is very labor intensive. So, I decided to make an easier version that still tastes just like lasagna and is a fraction of the time. My family loves this recipe, and I love it because it’s easy, done in under 30 minutes and also is made in one pan!

What Ingredients Are in Skillet Lasagna?

  • Ground Beef – As always, we use our own homegrown ground beef that is grass-finished and regeneratively raised. It’s delicious, lean and so good. Our ground beef is 90/10 and I never have to drain off a bunch of fat.
  • Minced Garlic – Because this is a meat-based sauce, I really wanted to bring in some rich flavors here. I love to add minced garlic to the ground beef bring some rich, tangy flavor.
  • Onion Powder – Most people add in onions to their ground beef to bring in flavor and sweetness, however, I have a bunch of onion haters in my house so, I substitute onions for onion powder. I want to make this a very flavorful pasta dish.
  • Italian Seasoning – Lasagna has a lot of fresh flavors. I love to use Italian seasoning in my Italian recipes. It’s a blend of herbs that really adds great flavor to your dish.
  • Diced Tomatoes – This is the base of the sauce.
  • Tomato Sauce – I like to add in tomato sauce in addition to diced tomatoes.
  • Rotini Noodles – I like to use rotini noodles because they’re fun for my kids. I have also used lasagna noodles and broke them up into chunks. These noodles are easier for my toddler to eat as well.
  • Salt & Pepper
  • Cottage Cheese – Regular lasagna can use either cottage cheese or ricotta cheese. My kids have a hard time with the texture of ricotta cheese, so I added cottage cheese to this skillet lasagna recipe.
  • Mozzarella Cheese – It wouldn’t be lasagna without a perfect blend of different cheeses. Mozzarella cheese is soft and melts beautifully. It also is so yummy!
  • Parmesan Cheese – Parmesan cheese also brings in a different flavor, so I topped this skillet lasagna with a sprinkle or two of parmesan cheese.

Recipe for Slow Cooker Pasta

  1. In a frying pan, combine ground beef and seasonings.
  2. Mix well and cook until beef is completely cooked through.
  3. Add in diced tomatoes, tomato sauce, rotini noodles and water. Cover and simmer for 10-15 minutes until noodles are soft. Stir frequently.
  4. When noodles are soft, remove from heat and add in cottage cheese. Mix until well incorporated.
  5. Sprinkle with mozzarella cheese and parmesan cheese.
  6. Enjoy!

How to Store Skillet Lasagna

Have you ever noticed that lasagna is better the second day? So is this skillet lasagna! Store the leftovers in an airtight container in the refrigerator for up to 3 days. Leftovers can easily be reheated in the microwave!

  • 1 lb. ground beef (lean, 90/10)
  • 1 tbsp Italian seasoning
  • 2 tsp kosher salt
  • 1 tsp minced garlic
  • 1 tsp onion powder
  • 1/2 tsp pepper
  • 2 14.5 oz cans diced tomatoes
  • 8 oz. tomato sauce
  • 2 1/2 cups water
  • 3 cups dry rotini noodles
  • 1 cup cottage cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded parmesan cheese

Instructions

  • In a frying pan, combine ground beef and seasonings.
  • Mix well and cook until beef is completely cooked through.
  • Add in diced tomatoes, tomato sauce, rotini noodles and water. Cover and simmer for 10-15 minutes until noodles are soft. Stir frequently.
