This poppyseed chicken casserole recipe is so good, like so good. Yet, it has simple ingredients. All this recipe consists of is, cream of chicken soup, sour cream, rotisserie chicken and Ritz crackers. Oh, and butter, it has butter too. So basically, all the best ingredients. It’s one of those recipes that when you think of comfort food, you think of this recipe. Is it the lowest in calories? No. But is it extremely good? Yes, yes, it is. In fact, when I take a meal to someone, I often make this recipe because it’s quick and everyone just loves it!

What Ingredients Are in Poppyseed Chicken Casserole?

  • Rotisserie Chicken – I love to pick up a rotisserie chicken and use it for this recipe. If I don’t have a rotisserie chicken, I will make my easy shredded chicken recipe for this. But hands down, using a rotisserie chicken is the quickest way to make this recipe.
  • Cream of Chicken Soup – This is where most of your flavor comes from.
  • Sour Cream– Sour cream is important because it thickens the sauce and also makes the poppyseed chicken casserole super creamy and rich.
  • Butter – Because butter makes everything taste better.
  • Ritz Crackers – Ritz crackers are my favorite for this recipe. They have a yummy buttery flavor and also get nice and crisp on the top when you bake the casserole.
  • Poppyseeds – Just sprinkle for some added flavor.

Poppyseed Chicken Casserole Recipe

  1. Preheat oven to 375 degrees F and spray a 9″x9″ baking dish with cooking spray.
  2. Shred rotisserie chicken into small pieces and set aside.
  3. Combine cream of chicken soup, sour cream, chicken and poppyseeds and mix until well incorporated.
  4. Dump the chicken mixture into the bottom of the 9″x9″ baking dish and spread evenly.
  5. Melt butter in a medium sized bowl and set aside.
  6. In a Ziploc bag, crush Ritz crackers into small pieces.
  7. Add the crushed crackers to the melted butter and coat well.
  8. Spread crackers evenly over top of the chicken mixture.
  9. Sprinkle extra poppyseeds over top of the casserole if desired.
  10. Bake for 25-30 minutes until the top of the poppyseed chicken casserole is golden brown and bubbly.
  11. Enjoy!

How to Store Poppyseed Chicken Casserole

  • Store in an airtight container in the refrigerator for up to 3 days. When you want to reheat the poppyseed chicken casserole, it’s best to bake it again rather than just microwave it. That way the crackers on top are still crunchy instead of soggy.

One of the best things about this recipe is that it can be made ahead of time! I will usually make this casserole in the morning, cover it, and pop it in the fridge for the day. Then when I get home after a busy day, I take it out of the fridge and bake it.

  • 10.5 oz cream of chicken soup
  • 1 1/2 cups sour cream
  • 1/2 cup butter
  • 2 packages Ritz crackers
  • 1 tbsp poppy seeds
