My family loves when I make my classic poppyseed chicken casserole recipe, but I wanted to have some too! So, I decided that I was going to make a gluten free version for me, and it did not disappoint. This casserole was so creamy, rich and flavorful. It was hard not to eat the entire pan!

What Ingredients Are in Poppyseed Chicken Casserole?
- Rotisserie Chicken – I love to pick up a rotisserie chicken and use it for this recipe. If I don’t have a rotisserie chicken, I will make my easy shredded chicken recipe for this. But hands down, using a rotisserie chicken is the quickest way to make this recipe.
- Gluten Free Cream of Chicken Soup – I have tried many, many gluten free cream of chicken soups and I have to say, Campbells Gluten Free Cream of Chicken soup is the best.
- Sour Cream– Sour cream is important because it thickens the sauce and also makes the poppyseed chicken casserole super creamy and rich.
- Butter – Because butter makes everything taste better.
- Gluten Free Table Crackers – Schar makes a gluten free table cracker that works well for this recipe. I found them at Walmart here.
- Poppyseeds – Just sprinkle for some added flavor.
Tools You’ll Need

Poppyseed Chicken Casserole Recipe
- Preheat oven to 375 degrees F and spray a 9″x9″ baking dish with cooking spray.
- Shred rotisserie chicken into small pieces and set aside.
- Combine cream of chicken soup, sour cream, chicken and poppyseeds and mix until well incorporated.
- Dump the chicken mixture into the bottom of the 9″x9″ baking dish and spread evenly.
- Melt butter in a medium sized bowl and set aside.
- In a Ziploc bag, crush crackers into small pieces.
- Add the crushed crackers to the melted butter and coat well.
- Spread crackers evenly over top of the chicken mixture.
- Sprinkle extra poppyseeds over top of the casserole if desired.
- Bake for 25-30 minutes until the top of the poppyseed chicken casserole is golden brown and bubbly.
- Enjoy!

Storage
Store in an airtight container in the refrigerator for up to 3 days. When you want to reheat the poppyseed chicken casserole, it’s best to bake it again rather than just microwave it. That way the crackers on top are still crunchy instead of soggy.
Easy Make Ahead Instructions
One of the best things about this recipe is that it can be made ahead of time! I will usually make this casserole in the morning, cover it, and pop it in the fridge for the day. Then when I get home after a busy day, I take it out of the fridge and bake it.

- 1 1/2 cups sour cream
- 1/2 cup butter
- 2 packages Gluten Free table crackers
- 1 tbsp poppy seeds
