At our house, breakfast for dinner is a staple multiple times a week. My cowboys love 2 things; beef and breakfast foods. So, when the tiny cowboys are feeling breakfast for dinner, but I don’t want to stand at the stove flipping a bunch of pancakes, I break out this recipe.

This recipe can be made with regular flour or gluten free flour. You can find my regular recipe here. The best part about this recipe is that you put 5 ingredients in the blender and give it a whirl, dump it in a baking dish, bake and serve. It’s seriously so dang easy!

What Ingredients are in Gluten Free German Pancakes?

  • Butter – Real butter is the best to use here. It gives the pancakes a better flavor. I use salted butter in this German pancake recipe.
  • Gluten Free Flour – My favorite gluten free flours are Cup4Cup Gluten Free Flour, Grandpa’s Kitchen Gluten Free Flour and Bob’s Red Mill Gluten Free Flour.
  • Eggs – My favorite eggs to use are pasture raised eggs from our chickens but feel free to use any eggs that you prefer.
  • Milk – Whole milk does wonders in this recipe. The extra fat in the milk helps to bind things together and create a pancake that is moist and delicious.
  • Salt – Salt also enhances the flavor.
  • Vanilla – I love to add vanilla to this German pancakes recipe. It adds a sweet flavor to these pancakes.

How to Make Gluten Free German Pancakes

  1. Preheat oven to 425 degrees F.
  2. Cut butter into 5 tablespoons and place on the bottom of a 9×13″ baking dish.
  3. Place the baking dish in the oven while it’s preheating to allow the butter to melt. When the butter has melted, remove the baking dish from the oven.
  4. While the butter is melting, mix together flour, milk, eggs, salt and vanilla in a blender.
  5. Pulse a few times until well combined.
  6. When the batter is mixed well, pour into the baking dish over top of the butter.
  7. Return to the oven and bake for 20-25 minutes until the German pancake is puffed and slightly browned around the edges and in the middle.
  8. Remove from oven and top with your favorite toppings.
  9. Enjoy!

Toppings for Gluten Free German Pancakes

The sky is the limit here but here are a few of our favorite options:

  • homemade raspberry or peach jam
  • powdered sugar
  • fresh fruit
  • maple syrup
  • whipped cream

Tips for Making Gluten Free German Pancakes

  • When you’re mixing the batter in the blender, it’s important not to overmix. A few pulses until it’s combined is perfect. Otherwise, it will not puff and rise like it should.
  • The German pancake will fall immediately after removing from the oven so don’t be alarmed. This is normal, and it still tastes great.

Storage

Refrigerator – If there are any German pancakes leftover (that’s IF), just slice them in squares and place them in an airtight container in the refrigerator.

Reheating – I have found that the best way to reheat these pancakes is to pop them in the microwave for 15-20 seconds. Then top them with your favorite toppings and enjoy them all over again.
