I am a big fan of make-ahead meals. When my kids get home from school, I am usually running at full speed until dinner and even after. On those days when I know making dinner is going to be difficult, I take some time in the morning and make a casserole or slow cooker meal for dinner that day. This easy taco casserole recipe is a recipe that you can easily make-ahead, throw in the fridge and bake later.
This easy taco casserole has quickly become one of those go-to meals in our house when I need dinner on the table fast. It’s simple to put together, uses ingredients I usually have on hand, and always hits the spot after a busy day. The layers of seasoned beef, melty cheese, and soft corn tortillas bake into the perfect cozy, family-style meal that everyone loves — no extra effort required.

What Ingredients Are in Taco Casserole?
- Ground Beef – As always, we use our own homegrown ground beef that is grass-finished and regeneratively raised. It’s delicious, lean and so good. Our ground beef is 90/10 and I never have to drain off a bunch of fat.
- Minced Garlic – My go-to ingredient for great flavor!
- Onion Powder – A dash of onion powder adds a savory depth of flavor that brings everything together, just without the chopping.
- Taco Seasoning – You can use a regular taco seasoning packet or try my homemade taco seasoning. It is our family’s favorite taco seasoning. It’s not too overpowering and is packed full of flavor.
- Black Beans
- Corn
- Mild Red Enchilada Sauce – If you want things a little spicier, feel free to substitute a spicier enchilada sauce. However, my children think mint gum is hot, so we keep things pretty mild around my house.
- Mexican Cheese Blend – Mexican cheese has the best cheese blend for a great flavored taco. So, I like to use the Mexican blend for this taco biscuit bomb recipe.

Recipe for Easy Taco Casserole
- Preheat oven to 375 degrees F.
- In a frying pan, combine ground beef and seasonings. Mix until well incorporated. Continue cooking until ground beef is completely cooked through.
- Add in enchilada sauce, black beans, and corn and simmer for 3-5 minutes to let flavors blend. Remove from heat and set aside.
- Spray a 9×13-inch baking dish with cooking spray and set aside.
- Cut the corn tortillas into fourths and layer half of them on the bottom of the prepared dish.
- Spoon half of the beef mixture over the tortillas and spread it evenly.
- Sprinkle with 1 cup of cheese.
- Repeat the layers with the remaining tortillas, beef mixture, and cheese.
- Bake for 20-25 minutes until the top of the casserole is golden brown.
- Remove from heat and serve with favorite toppings.

Storage and Reheating
I store this taco casserole in an airtight container in the refrigerator for up to 3 days. It can easily be microwaved, but for best results, I have found that popping the casserole back in the oven for a few minutes is better.
