As ranch wife and mom of four boys, I do not have hours to spend in the kitchen making dinner. As much as I would love to, it’s just not possible. We’re definitely in our busy season and I’m just thankful when I get a hearty dinner on the table. Lasagna is one of my kids’ favorites, but it can be so time consuming and labor intensive! My son was begging for lasagna, so I decided to create a slow cooker recipe that didn’t take forever, and I just set it and forget it. I’m super pleased with how it turned out and so was my family!
This easy slow cooker lasagna has all the classic flavors of traditional lasagna—rich meat sauce, creamy cheese layers, and tender noodles—but without the extra steps or mess. It’s the perfect hearty comfort meal for busy families who still want a home-cooked dinner without spending hours in the kitchen. What Ingredients Are in Slow Cooker Lasagna?
- Ground Beef – As always, we use our own homegrown ground beef that is grass-finished and regeneratively raised. It’s delicious, lean and so good. Our ground beef is 90/10 and I never have to drain off a bunch of fat.
- Spaghetti Sauce – I make my own spaghetti sauce that is so flavorful and delicious, but if you are just grabbing a sauce at the store, make sure to grab something with lots of flavor!
- Oven Ready Lasagna Noodles – We’re going for quick here, so there isn’t time to boil the noodles. Just grab some oven ready lasagna noodles and as they cook during the day, they will absorb the moisture and be so tender and delicious when the lasagna is done.
- Cottage Cheese – Regular lasagna can use either cottage cheese or ricotta cheese. My kids have a hard time with the texture of ricotta cheese, so I use cottage cheese instead in this recipe.
- Mozzarella Cheese – It wouldn’t be lasagna without a perfect blend of different cheeses. Mozzarella cheese is soft and melts beautifully. It also is so yummy!
- Parmesan Cheese – Parmesan cheese also brings in a different flavor, so I topped this skillet lasagna with a sprinkle or two of parmesan cheese.
- Egg – The egg helps hold the cottage cheese mixture together, so it doesn’t become runny as the lasagna bakes. This gives the layers more structure and helps each slice hold its shape when served.

Recipe for Easy Slow Cooker Lasagna
- In a frying pan, combine ground beef and seasonings.
- Mix well and cook until beef is completely cooked through.
- Add the spaghetti sauce and water to the cooked ground beef, stirring until fully combined. Let it simmer for 2–3 minutes to blend the flavors.
- In a medium mixing bowl, combine all the cheese mixture ingredients and stir until smooth and well incorporated. Set aside.
- Spoon half of the meat sauce into the bottom of the slow cooker, spreading it evenly.
- Layer 4–5 lasagna noodles over the meat sauce, breaking them as needed to fit.
- Spread half of the cheese mixture evenly over the noodles.
- Repeat the layers with the remaining meat sauce, noodles, and cheese mixture.
- Cover and cook on low for 4–6 hours, until the noodles are tender and the sauce is bubbly.
- Just before serving, sprinkle with ½ cup mozzarella cheese and ¼ cup Parmesan cheese. Cover again for a few minutes until the cheese is melted.
- Enjoy!

Gluten Free Slow Cooker Lasagna
This recipe can easily be adapted to be gluten free. Simply swap out the regular noodles for gluten free noodles. Here are the noodles I suggest and love:
