Easy Beef Stroganoff with Ground Beef
I have a confession to make. My family are not fans of stroganoff. We’re not huge fans of sour cream so my kids always thought it was bitter and would not eat it. This recipe actually took me 6 times to make to get it so that my kids loved stroganoff. So, I hope you all enjoy it, because this recipe was a little rough on me.
This recipe has the traditional flavors of beef stroganoff with a few tweaks. Adding the cream cheese and a few other seasonings helps to complement the flavors, giving a creamy, comforting taste. It’s the perfect balance of rich and savory, with a smooth texture that pairs perfectly with egg noodles or mashed potatoes. Even picky eaters will love this cozy, homemade meal that’s pure comfort in every bite.

What Ingredients Are in Ground Beef Stroganoff?
- Ground Beef – I always use our grass finished blend of 90/10. It’s lean, delicious and you don’t have to drain off a bunch of grease. If you’re in the market for some great beef, you can find that here.
- Cream of Mushroom Condensed Soup – This is the base of your gravy and will be so yummy.
- Beef Broth – Adding beef broth adds more flavor to this recipe than just water.
- Egg Noodles – I like to whip up a batch of my homemade egg noodles for this recipe. (Find that recipe here). However, if you don’t have the time for that, just use regular pre-packaged egg noodles and cook according to the package directions.
- Milk – In recipes, I always use whole milk. The extra fat in the milk gives more flavor to the food.
- Sour Cream – As mentioned, I do use sour cream in this recipe, but significantly less than other recipes would call for.
- Cream Cheese – Just 4 oz. of cream cheese helps to complement all the flavors and add a creamy, delicious stroganoff.
- Cornstarch – After the beef tips have cooked low and slow all day, you are going to make a slurry with cornstarch and water to thicken it up. Just add a few tablespoons of cornstarch together with 1/4 cup cold water and give it a good stir. Then add it to the gravy to thicken it up.

Easy Ground Beef Stroganoff Recipe
- In a large skillet, cook the ground beef with seasonings over medium heat, breaking it apart as it browns.
- Once the beef is fully cooked, stir in the beef broth, cream of mushroom soup, milk, and brown gravy mix. Reduce the heat to low and let it simmer for about 10 minutes to blend the flavors.
- Meanwhile, cook the egg noodles according to the package directions. Drain well and set aside.
- Cut the cream cheese into small pieces and add it to the beef mixture along with the sour cream. Stir until the cheese is melted and everything is smooth and creamy.
- Add the cooked noodles to the skillet and stir until well combined.
- In a small bowl, whisk together the cornstarch and water to make a slurry, then pour it into the stroganoff. Stir until the sauce thickens to your liking.
- Serve warm and enjoy!

To make this recipe gluten free, you will need to find a gluten free brown gravy mix as well as a gluten free cream of mushroom soup. I have found both of these at Walmart or my local grocery store. I will link them below.

Storage and Reheating
Store the leftovers together airtight containers in the refrigerator for up to 5 days. For best results, to reheat the leftovers, place in a frying pan and reheat until warmed through.
