Quick and Easy Cilantro Lime Rice
One of my favorite places to eat is Costa Vida. I love ALLLL the flavors and could honestly order just about everything on the menu. I’ve recreated quite a few of their recipes at home, and I’m not even kidding when I say I could eat it every single day. The one thing that took some trial and error, though, was getting the cilantro lime rice just right. It took me about five attempts to nail it—but wow, this version is absolutely perfect.

What Ingredients Are in Cilantro Lime Rice?
- Jasmine Rice – Please do not use any other version of rice. Trust me, this was part of my failing on the first few attempts. The very best rice to use for this cilantro lime rice is Jasmine rice.
- Olive Oil – Frying rice in olive oil before adding liquid (also called toasting the rice) helps coat each grain, which keeps the rice fluffy and prevents it from getting sticky or mushy.
- Water
- Minced Garlic – Minced garlic adds a light savory flavor that balances the lime and makes the rice taste more flavorful overall.
- Lime Juice – Lime juice adds that fresh, bright pop of flavor that really wakes up the rice and gives it that signature zesty finish I love.
- Salt – Rice is quite bland without some salt, so I like to add some salt to enhance the flavor.
- Fresh Cilantro – I love the flavor of cilantro—as long as it’s not too overpowering. Adding just a little freshly chopped cilantro gives this recipe the perfect balance and fresh finish without taking over the whole dish.

How to Make Easy Cilantro Lime Rice
- In a medium saucepan, combine the oil and rice, stirring until the rice is evenly coated. Cook for 3–5 minutes, stirring frequently, until the rice begins to lightly brown.
- Add the water, minced garlic, and salt, and bring to a boil over medium-high heat.
- Reduce the heat to low, cover, and simmer for 10–15 minutes, or until the water is absorbed and the rice is tender.
- Remove from the heat and stir in the lime juice and chopped cilantro until well combined.
- Cover and let sit for 5–10 minutes, then fluff with a fork.
- Serve and enjoy!

Tips and Substitutions
- Brown Rice – As previously mentioned, you can use any variety of rice, but I think Jasmine rice is the best in this recipe. You might have to adjust the water ratio if you use a different kind of rice.
- When cooking rice, to make sure that the bottom doesn’t burn, make sure to stir frequently and scrape the bottoms when stirring.
- If the rice appears to be “too dry,” add a little more water and simmer for a few minutes longer.
Storage and Freezing
Storage:
Allow the cilantro rice to cool completely before storing. Transfer to an airtight container and refrigerate for up to 4 days.
Reheating:
Reheat in the microwave in 30–45 second intervals, stirring between each, until warmed through. For best texture, add a splash of water before reheating to keep the rice fluffy and moist.
Freezing:
Allow the cilantro rice to cool completely, then transfer it to a freezer-safe, airtight container or freezer bag. Press out as much air as possible and freeze for up to 2 months for best quality.
Reheating from Frozen:
Thaw overnight in the refrigerator or reheat directly from frozen in the microwave. Add a splash of water, cover loosely, and heat in 45–60 second intervals, stirring between each, until hot and fluffy again.
