Slow Cooker White Chicken Chili
When life gets crazy, I live and die by slow cooker meals. This white chicken chili is one of our favorites to add to those busy weekday rotations when the weather gets cold. Nothing beats a hearty, fulfilling soup after a long day in the cold.
Most often we have beef and pork, but every now and then I sneak a chicken recipe into the rotation to switch things up. This is actually a favorite of my tiny cowboys. It’s loaded with flavor, protein and vegetables so it makes me happy that they love it. It’s just a really good soup.

What Ingredients Are in Creamy White Chicken Chili?
- Chicken – I used chicken breasts for this recipe because it was all I had on hand. You can use any boneless cut of chicken or even use rotisserie chicken if you want.
- Great Northern Beans – Great northern beans are tan in color and have great flavor.
- Diced Green Chilis – I always use the mild green chilis because my kids DO NOT do spicy things. If you like things a little spicy, feel free to use a spicier version of green chilis and add in a little extra chili powder.
- Corn – I love to add corn because the corn makes this a heartier soup and also adds in some sweetness.
- Chicken Broth – This is going to be the base of your soup.
- Cream Cheese – Cream cheese makes this soup richer. It also makes it creamy which is what we are going for.
- Heavy Whipping Cream – This is my secret to most of my recipes, I love adding heavy whipping cream to enhance flavors and really make them pop.

Creamy White Chicken Chili Recipe
- Place chicken breasts in the bottom of a slow cooker.
- Add in chicken broth and seasonings over top of chicken.
- Drain and rinse beans and add to slow cooker.
- Drain corn and add to slow cooker.
- Cover and cook on low for 6-8 hours until chicken is fully cooked.
- Remove chicken from slow cooker and shred. Return chicken to slow cooker.
- Cut cream cheese into small squares and add to slow cooker.
- Add in heavy whipping cream.
- Cover and let cook for 30 minutes until cream cheese is soft and melted.
- Remove cover and stir until cream cheese is well incorporated.
- Spoon into bowls and top with favorite toppings.
- Enjoy!
Gluten Free Creamy White Chicken Chili
This recipe is gluten free! I do always caution however, that you check to make sure that the ingredients YOU are using are indeed gluten free.
How to Store Creamy White Chicken Chili
The best part about this recipe, is that it makes great leftovers! Store it in an airtight container in the fridge for up to 5 days. To reheat, spoon desired amount into a bowl and microwave or reheat on the stove in a saucepan.

- 1 tsp onion powder
- 1 tsp minced garlic
- 1 tsp kosher salt
