Life has been so busy lately. I kinda hate that it’s this busy. I keep telling myself that it’s just a season and it won’t always be this crazy. Hopefully that’s true! 🙂 But, while we’re in this season, one thing that I absolutely will not let suffer, is family dinners at the table. This means that lately, I have been making lots of recipes in the slow cooker. Whoever invented the slow cooker is a genius by the way.

This slow cooker creamy chicken taco soup is one of the easiest meals I have on my site. You literally dump everything in and set it and forget it. The end result is a rich, flavorful soup that tastes like it’s been simmering on the stove all day. The cream cheese makes it perfectly velvety, while the taco seasoning adds that bold, southwest kick everyone loves. It’s one of those meals that feels special but takes almost no effort — which makes it a total win on those extra busy days!

What Ingredients Are in Creamy Chicken Taco Soup?

  • Chicken – I used frozen chicken breasts for this recipe. Just grab them out of the freezer and dump them in.
  • Great Northern Beans – Great northern beans more mild and have great flavor. My kids love them.
  • Diced Tomatoes – I love using diced tomatoes in this recipe because they add a burst of fresh flavor, a touch of acidity to balance the creaminess, and just the right pop of color to make the soup even more delicious and hearty.
  • Diced Green Chilis – I always use the mild green chilis because my kids DO NOT do spicy things. If you like things a little spicy, feel free to use a spicier version of green chilis and add in a little extra chili powder.
  • Corn – I love to add corn because the corn makes this a heartier soup and also adds in some sweetness.
  • Cream Cheese – The cream cheese balances all of the flavors out and adds some creaminess that is so good.

Tools You’ll Need

Creamy Chicken Taco Soup Recipe

  1. Place chicken breasts in the bottom of a slow cooker.
  2. Add in seasonings, lime juice, corn, and diced tomatoes.
  3. Drain and rinse beans and add to slow cooker.
  4. Place the cream cheese on top of the ingredients.
  5. Cover and cook on low for 6-8 hours until chicken is fully cooked.
  6. Remove chicken from slow cooker and shred.
  7. Return chicken to slow cooker and mix until all ingredients are well incorporated.
  8. Spoon into bowls and top with favorite toppings.
  9. Serve with tortilla chips and enjoy!

Gluten Free Creamy Chicken Taco Soup

This recipe is gluten free! I do always caution however, that you check to make sure that the ingredients YOU are using are indeed gluten free.

Storage and Reheating

The best part about this recipe, is that it makes great leftovers! Store it in an airtight container in the fridge for up to 5 days. To reheat, spoon desired amount into a bowl and microwave or reheat on the stove in a saucepan.

  • 15 oz. corn
  • 2 (14.5 oz) cans diced tomatoes
  • 4 oz. diced green chilis
  • 15.5 oz. Great Northern beans, drained and rinsed
  • tbsp lime juice
  • 1 tsp kosher salt
  • 1 tsp minced garlic
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 tsp chili powder
  • ½ tsp pepper
  • 8 oz. cream cheese

Optional Toppings
